Food + Nutrition: Dairy free, gluten free banana bread

Been baking a lot more during the lockdown. Its calming and soothing and takes time. I’m enjoying the peace and brainspace of slowing down. This wee gem is a fave – gluten free, dairy free and refined sugar free. You can either add choc chips to the top (which makes it non dairy or RS free obviously) or not 💛

You’ll need

  • 1/2 cup plant based milk – I use unsweetened almond milk
  • 2 or 3 bananas depending on size
  • 1/2 cup organic coconut sugar
  • 2 eggs
  • 1 and a 1/4 cups mixed GF flour
  • 1/2 cup coconut flour
  • 1 tsp vanilla essence
  • 1 tsp baking powder

Mix all dry ingredients together then add in eggs, bananas, essence and milk. Make sure its kinda sloppy, not dense in thickness. Add more milk if needed, to make a cake batter consistency.

Pop into a lined loaf tin. Add sliced banana to the top or choc chips if you desire 🙂

180 degree C for 45 mins… watch the top.. it can brown up pretty quick.

Eat it warm! so good x
